pounds broccoli, florets cut into 1-inch pieces, stems peeled, halved and sliced ½-inch thick
tablespoons grapeseed or other neutral oil
01In a large bowl, toss the broccoli with the oil and ½ teaspoon salt. Heat a cast-iron 12-inch skillet over high for 3 minutes, or until a drop of water evaporates in 1 to 2 seconds. Add the broccoli and use a wooden spoon to pat it in a snug, even layer; reserve the bowl.
02Cook without stirring until deeply browned in spots, about 4 minutes. Stir, turn the broccoli, and continue to cook until charred and crisp-tender, another 4 to 5 minutes. Return the broccoli to the bowl and spoon the sesame sauce on top. Stir until evenly coated. Taste and season with salt.
