Steel-cut oats take advantage of the Durotherm's off-heat cooking ability to make deliciously creamy oats while minimizing the risk of boiling over or scorching. Browned butter and dried apples add nutty, fruity flavor to the starchy oats, which we spiked with allspice.

A healthier new year!
I absolutely love cooking this oatmeal. Browning the butter and sautéing the kernels is a delight, popping like popcorn and watching them puff up. I adapted this recipe to my Le Crueset and just kept an eye on how things cooked. I don’t have a Duotherm but it worked just fine. I did not limit this to just apples. I used dried apricots.
