There are many ways to prepare the South Asian dish called chicken lajawab (lajawab often is translated from Urdu as “priceless” or “peerless”). Our rendition, a riff on a recipe from “Madhur Jaffrey’s Step-by-Step Cooking,” employs a high-impact seasoning paste two ways: it’s rubbed onto chicken parts that are cooked in a hot oven, and it’s combined with yogurt to serve as an accompaniment. Depending on their capsaicin content, the jalapeños may add a decent amount of chili heat; if you wish to temper their spiciness, remove the seeds and ribs before dropping the chilies into the blender. Basmati rice or warmed naan are excellent alongside.




Don’t skip the step of slashing the chicken parts. The cuts allow the seasoning paste to flavor the meat throughout. They also help speed up cooking.

This is a delicious weeknight meal!
I was browsing recipes with chicken thighs and noticed I had all the ingredients alee tree day so I made it. It was a major hit. Everyone loved it. It took a little longer to get the thighs brown, didn’t get any crispness but I didn’t think it needed it. So delicious, served with basmati rice, and cilantro mint and lime on top. So good. Going into the weeknight roster of recipes. If only I could remember the name of it…

Weeknight winner!
I just happened to have all the ingredients on hand and was able to whip this up quickly last night. It had so much flavor, the chicken was juicy and the skin did get a little color on it so I didnt need the broiler but I may try it briefly next time. The extra sauce was great on sandwiches the next day too! Thanks MSK

East and delicious! Agreed with the others…under the broiler the last 5-10 is clutch…just keep an eye on it. Definitely making this again, pairs really well with the Aloo Bharta recipe :)

The flavor of the sauce is awesome! However, I didn't get very much color on my chicken. It looked almost like boiled chicken. Next time I would finish under the broiler, turn the heat up or even do it on the grill. I think that would make it just perfect.

I also didn't have my chicken crisp up. Excellent dish, but it goes down for me as a favorite, something that I'd make again, rather than a top choice, which I'd consider exceptional.

Loved these flavors! I use skinless chicken thighs, and put it under the broiler for the last 5 minutes to create some browning. Flavors were wonderful.
