Made with the meat from a store-bought rotisserie chicken, this satisfying salad comes together quickly and easily. Toasted walnuts not only lend richness and texture, they also add umami, making the flavors fuller and more complex. Steeping the chopped onion for a few minutes in lemon juice tempers their harshness, so don’t skip this step.

Delicious light summer dinner!
I made this tonight using a rotisserie chicken and baby spinach and paired with a slice of garlic bread. The recipe calls for 1 teaspoon of salt. I use Morton’s Kosher salt and used 1/2 teaspoon. It was the perfect amount of salt for the recipe.
