Chikan Rasam
"Chikan rasam, or South Indian spicy chicken soup, is an aromatic soup of fragrant spices enhanced with the souring properties of tamarind. Some recipes substitute lemon, but tamarind is more common. Chicken rasam is garnished with cilantro (coriander) and mint and is served with steamed basmati rice on cold wintery nights." — Jenn Louis

01Toast the spices in a small sauté or frying pan over medium-high heat, stirring frequently, for 2–4 minutes until fragrant. Watch them carefully so they don’t burn. Leave to cool. When cool, grind the spices finely in a spice or coffee grinder and set aside.
