A beloved Mexican breakfast dish that’s equally great for lunch or dinner, chilaquiles feature tortilla chips that are lightly cooked in a red or green sauce and topped with melted cheese. It was created as a way to use up leftover tortillas and other ingredients, though the dish works equally well with store-bought chips, as in this recipe. If you have some corn tortillas on hand and want to make your own, see Oven-Baked Tortilla Chips, below. If you like, to round out the meal, serve the chilaquiles with scrambled or fried eggs.

“I couldn’t walk into a fancy restaurant and spend $80 on a meal that’s as good as this one.”
That’s what one of my guests said. I made this Chilaquiles recipe accompanied by Milk Street’s Cilantro Rice and Milk Street’s Refried Beans, guacamole, and some chipotle grilled shrimp. One of the best meals ever had by anyone. The Chilaquiles especially received rave reviews. More than a 5 star meal.

A great way to use leftovers (esp the adobo chilies)
This was delicious. And if you're like me, you might just have a half can of chilies in adobo in the fridge that you need to use (because every recipe always just calls for one chili in adobo sauce and those little cans always have like 3 of them). We had some leftover homemade tortillas that we turned into chips. Had some leftover steak and chicken from Mexican food a couple of nights ago and threw that in at the end. We added a couple of fried eggs on top for a really nice Sunday brunch. This recipe's a keeper!

Hard To Go Wrong
Important not to overdo it at the very end. One doesn't want to end up with an overcooked uniform blob now, does one?
