01In a 5.3-quart Durotherm over medium-high, combine the butter, oil and leeks. Cook, stirring occasionally, until the leeks begin to brown, 6 to 8 minutes. Stir in the garlic, thyme, apple, 2 teaspoons salt and ¼ teaspoon pepper. Cook, stirring, until fragrant, about 1 minute.
