This colorful side dish can be turned into a light main by topping it with fried eggs. To keep the flavor and color of cilantro fresh and bright, we blend the herb with a few aromatics until smooth, then mix the puree into the rice after the grains are cooked.

Tip

Don't fluff the rice immediately after cooking. Covering the pan with a towel and allowing the rice to rest for 5 minutes prevents the grains from turning mushy when the cilantro puree is folded in.

Nice take on when to add the green sauce!
I have made a very similar recipe that adds in the blended greens during the cooking of the rice. Wow! It comes out so much better to add them after rest and fluffing! Great approach!

I have made this recipe without adding it to rice as it makes a great dip for pita or raw veggies!

I’ll never eat plain rice again
I saw this on the TV episode and made it as a side for Asian pork chops and it was delicious! Next time I’ll add a little coconut milk for a deeper flavor, but this recipe is a keeper. I even reserved a little of the cilantro mixture and topped off the broiled pork chops!

Cilantro rice
This recipe changed my mind about cilantro. I now crave cilantro.

Foolproof in multiple times of preparing this per recipe. We find we prefer to dial down the garlic by one clove and up the lime juice by a little. Not only delicious, this also holds unexpectedly well if you have leftovers to heat in the microwave (we seldom use ours but heating leftover rice is a good use for it) and use the next day. (For microwave heating, you'll probably want to add a tablespoon'ish of water stirred into the rice, cover the dish with a lightly damp paper towel and it will only take a few seconds.)
