Coconut-Mango Frozen Daiquiri


This daiquiri packs tons of clean, intense fruity flavor because it uses frozen fruit—not ice—for its chill, so there’s no dilution. Several tablespoons of Pure Indian Foods Organic Alphonso Mango Purée—some blended into the cocktail, the rest drizzled over it—add an extra punch of sweet-tangy flavor. Naturally sweet coconut water offers tropical flavors and sweetness without being cloying. All that natural sweetness also means no added sugars are needed to craft a perfectly refreshing summer sipper. The salt may seem unusual, but—just as in our cooking—in our cocktails a hint of salt elevates and brightens all the other flavors without adding any salty flavor.

2 cups frozen mango chunks
1 cup unsweetened coconut water
3 tablespoons Pure Indian Foods Organic Alphonso Mango Purée, divided
2 1/2 ounces white rum
1/2 ounce orange liqueur
6 to 10 granules kosher salt

Blend Ingredients

In a blender, combine the mango chunks, coconut water, 2 tablespoons Pure Indian Foods Organic Alphonso Mango Purée, rum, orange liqueur and salt. Puree until smooth, about 20 to 30 seconds. Pour into a large glass (coupe or highball), then used a spoon to drizzle the remaining 1 tablespoon mango puree over the top.
