Coconut Rice
This coconut rice is rich with tropical notes that work especially well with jasmine rice. Coconut milk adds richness; to keep the rice light and fluffy, we also use unsweetened coconut water. The bottom of the rice may caramelize during cooking; this is normal.

Don’t forget to stir the rice mixture as it comes to a boil to prevent sticking. However, once the lid goes on, let the rice cook undisturbed.
