Coquito is a traditional Christmas cocktail from Puerto Rico that often is compared to eggnog. Though creamy and rich, it doesn't always contain eggs. It's traditionally made from a blend of evaporated milk, sweetened condensed milk and coconut milk, but we preferred a lighter version that replaced the evaporated milk with whole milk. We liked this with 8 ounces white rum, but use more or less to your taste. The blender ensures the ground spices are evenly dispersed evenly, but it also can be whisked. Refrigerate for up to two days.
