This dish, inspired by a recipe in “Season” by Friend of Milk Street, Nik Sharma, delivers a flavorful steak plus salad using just a handful of ingredients. A simple spice mix spiked with orange zest seasons both the steak and the vinaigrette that dresses the arugula.

Tip

Don't use extra-virgin olive oil, as its smoke point is too low for searing the steak; regular olive oil is the better choice. Alternatively, use 1 tablespoon grapeseed or other neutral oil for cooking the steak and 2 tablespoons extra-virgin olive oil in the dressing.

Delicious and so aromatic!
I love this recipe and will definitely make it again (often). I accidentally added cinnamon (thinking it was coriander), and almost scrapped the whole thing, but I’m glad I didn’t. I went a little heavier on the coriander and garam masala, plus black pepper and it was a beautiful, balanced result. The aromas while cooking and eating were just gorgeous.

Rare Milkstreet '3' for me
Ok, maybe 3 seems harsh. Perhaps 3.5 because it was so fast and easy and definitely was BIG on flavor. I liked the flavor profile, but it was just so intense. I do grind spices to order (not the masala) so the coriander was pungent and lovely; just intense with the garam masala and fresh orange and salty (agree with Elridge). I use Diamond Crystal kosher for all cooking and it's hard to over salt with, but I would cut back some next time. I had made fresh roti to go with so it worked out to wrap in the roti to tone everything down some. With SO many great options here I don't know if I'd return to this one, but it is fast, easy and could definitely be a great meal if toned down a tad or you enjoy ~very~ intense flavors.

Fabulous but salty
Fabulous flavor and so easy with minimal ingredients! The amount of salt called for is too much though (and I'm typically heavy on salt). Will definitely make again anyway!
