Use dukkah to add crunch to salads, to season olive oil for dipping bread, or to create a crust on roasted or grilled meat, chicken or fish. Store in an airtight container at room temperature for up to a week. Freeze for longer use.

Can I substitute regular cashews for raw cashews?

Hi Tamara -

Roasted, salted cashews should work fine, but you definitely won't need to toast them for very long. Just make sure they don't overbrown. I'd also taste first and then season to taste with salt as the mixture may already be salty enough with salted cashews.
