Ginger-Curry Grilled Chicken Kebabs

Mishkaki are grilled skewers of marinated meat from Zanzibar, an archipelago in the Indian Ocean, just off the coast of Tanzania. The islands’ cuisine represents a fusion of the people and cultures—Persian, Portuguese, Arabic—that once colonized or settled in the area. These kebabs are an adaptation of the mishkaki from “Feast: Food of the Islamic World” by Anissa Helou. Chunks of chicken are marinated in an aromatic mixture of ginger, garlic, spices, tomato paste and lemon juice before they’re skewered and grilled. Serve with warm naan and, if you like, plain yogurt for drizzling.

Don’t worry if the cut pieces of chicken are irregularly shaped. As long as they’re similarly sized, shape isn’t important. Don’t crowd the skewers on the grill grate. Allow some space between them so heat circulates and the chicken cooks quickly and without steaming.

Delicious. I used about 1/8 teaspoon of cayenne and that was plenty of heat. The red onions and bell peppers really go well with the chicken so don't forget those!

Tasty and easy on the eyes
Glad I looked this up, because your magazine didn't have the dish's origins. Zanzibar! That's a first for me. This was easy and delicious, looked great too. I served it with Indian spicy potatoes and Cajun barbecued onions. A bit of fusion, but it worked!

lots of flavor!
Really tasty, easy to prepare and crave-able! We had it with some chutney and next time I will make a Basmati rice pilaf to go with as well. And there will be a next time soon!

Great chicken breast recipe
I can count on one hand the amount of recipes for chicken breasts I like. This recipe is delicious, easy, and fast. You even get nice char marks on the chicken breast. Which I’ve never been able to achieve with chicken breasts on the grill. I will definitely be making this again.
