Instant Pot Floating Island Meringue
Île flottante, or “floating island,” is a classic French dessert of meringue poached gently in warm milk. Here, it gets a modern twist thanks to the Instant Pot. High-temperature pressure cooking may seem counterintuitive for such a delicate dish, but the fluffy, melt-in-your-mouth texture says otherwise. When cooled, the meringue is firm enough to slice like a cake. We love drizzling each portion of this simple, elegant dessert with the orange liqueur–spiked version of our Instant Pot dulce de leche, but caramel, crème anglaise or your sweet sauce of choice also would be superb, with some fresh berries alongside.
