Jollof Rice with Shrimp

Jollof is a tomato and rice dish popular throughout West Africa. For our version, we use fragrant basmati rice and flavor it with garlic, curry powder and dried thyme. Shrimp give the dish substance and make it into a light meal. If you prefer, you can use an equal amount of medium (41/50 per pound) shrimp; their smaller size means they can be used whole (no need to cut them in half after shelling and deveining).

Tip

Don’t drain the tomatoes. Their liquid is necessary for properly cooking the rice. But don't forget to pat the shrimp dry before seasoning them with salt and pepper; excess moisture may make the rice soggy.

This looks good, but what if you don't have an Instant Pot? Can you use a Dutch oven? If so, how does that change the directions? Thanks.

This is one of the best things I made in my pressure cooker. The spice balance was great, shrimp was perfect and rice had just a tiny bit of bite and was not gummy at all. Thanks.

Definitely a keeper. Only question is the adjustment for old fashioned pressure cookers that don't have a High or Low setting.

Unfortunately we only tested these recipes in an Instant Pot so we don't have conversion instructions for other electric or stovetop pressure cookers. I'm so sorry!

I love the flavor and it turned out well, but as it was cooking in my instapot it kept stopping the cooking cycle with a message that the food was burning. I opened and scraped the bottom of the pot and added a little water, but this happened 3 times. Any suggestions? Thank you.

The flavor was great but the rice was mushy and gummy. We followed the recipe as closely as possible in terms of liquid, type of rice and rinsing the rice.
