For this simple chicken salad, miso (or soy sauce) lends savory depth to the mayo-based dressing while shredded red cabbage adds both crunch and color. For ease, use a store-bought rotisserie chicken; it will yield enough shredded meat for this recipe. Pile the salad onto leafy greens or a bowl of warm rice. This recipe can easily be scaled up or down.

Veggie Version
Went with a prior commenter's suggestion and went 1T rice vinegar and 2t Sriracha. Used one bag Qourn Tenders and prepped them with my own rotisserie chicken recipe. Two scallions AND all of the cilantro. Threw it on a bed of mixed greens. Fantastic.

Delicious
In less than 10 minutes, I had a delicious salad that tasted like an expensive treat to be enjoyed outdoors on a warm day. Will be on my summer rotation, for sure! Mayo and miso? Who knew. And yes, the toasted sesame oil is the best final touch.

Excellent chicken salad
The title says it all. The dressing was excellent as written. Easy prep with rotisserie chicken and packaged cabbage slaw. I did not expect such a flavorful result from such simple ingredients. Will definitely make again

This was delicious! Because the flavors are different, I did 1 TB rice vinegar and 2 tsp chili garlic paste instead of one or the other. It turned out great!

I only had the regular chili paste without garlic and I used the last of the cilantro for my Puerto Rican sofrito that I made the day before and it has a lot of garlic. I followed the recipe and when it came to the chili I just added a full size tablespoon with the chili. It was fantastic! What makes this recipe work is the combination of the Mayo, miso, vinegar, garlic, and chili. That mixture packs a lot of Unami. Delish!!

I really didn't love the mayo miso sauce. I struggle with mayo though.
