Soy sauce, mirin, white miso and honey combine to create a sweet-savory balance in this super-simple recipe. Some of the glaze mixture is reserved for serving—drizzle it over the salmon itself or onto a side of sautéed greens or broccoli.

Tip

Don't use salmon fillets from the tail end of the fish, as they are thinner and will overcook under the broiler. Purchase center-cut fillets and try to get pieces of the same thickness so they cook at the same rate.

Easy and beautiful
I make this at least once a month. It tastes delicious and is very striking .

Easy & Delicious
This recipe couldn't have been any easier. I don't typically like green onions but the sesame seed and green onion combo was very nice. The miso mixture went very well with the salmon. The only change I made was to warm up the remaining miso mixture prior to drizzling onto the salmon so it would not cool down the salmon.

Excellent salmon recipe. My kid and hubby were fighting for the dressing. I will have to double it. It goes very well over rice.

Delicious
Made this when it was a really hot day and there was no way we'd fire up the oven. Cooked on the grill for about 9min and it was absolutely terrific. Paired with the Milk Street Smashed Cucumber Salad and it made for a very satisfying meal on a day that was not meant to be spent in the kitchen! Will be adding it to the rotation for sure.

This was really good! I think the crunch of the sesame seeds was an added bit I almost didn’t do...glad I did. I thought there wasn’t enough miso, so I added a little more. Mistake. It would have been great just the way it was written. Will be making this again. It was easy and fast. Perfect middle of the week meal for us.

This is too sweet. I'd halve the honey at minimum. But once you brush the salmon, I can't imagine needing to then pour more glaze on it (we didn't and it was already too sweet). I think the flavor was fine but had no complexity because it was basically pure sugar.

Very good. Definitely not too sweet, if anything, the miso adds quite a bit of salty flavor. Drizzling the sauce over the fish after cooking really adds great flavor. Made this with brown Basmati rice.

I made this tonight. It was delicious! A few modifications: I cooked it on the bbq (‘cause we are in Arizona and why would I put the oven on??!) as a result salmon had lots of the glaze when it was finished cooking so I did not add the extra glaze. (I froze the extra for another lucky piece of salmon.) I did not have mirin so I substituted rice vinegar. This recipe is a keeper -thanks Milk Street!

The Milk Street Cookbook (5th edition) includes all of the recipes from Season 1 - Season 5 of the Milk Street TV show. Unfortunately this recipe was not featured on the show so it was not included.

This salmon was absolutely delicious! Based on other comments, I used only a teaspoon of mirin and added a half teaspoon of rice vinegar to balance things out. It was perfect. I could only find thinner cuts so I pan-fried to avoid overcooking. Served with basmati rice and Milkstreet's 'cilantro, scallion and cucumber salad'.

Made this last night. Couldn't find Mirin, so I substituted with the same amount of Marsala wine. Worked well. I also used Everything but the Bagel in place of the sesame seeds and that was worked well too. This was a huge hit with my family. I'm not a big fan of salmon myself, but this made it great for me, ate every bite! I made this with Pearl Couscous "Risotto" and Sesame And Cumin Roasted Green Beans With Tahini Sauce both here on the Milk Street site. All three dishes are keepers for us.
