Miso–Spiced Rum Bananas Foster

We’ve given bananas foster, an American classic, a big flavor update. Honey sweetens while adding floral nuances and miso balances with a delicious savoriness. We use spiced rum as a one-ingredient way to infuse the buttery sauce with flavor and aroma. An optional dusting of Chinese five-spice powder lends intriguing spiciness that complements the rum.

What's spiced rum??

Hi Marybeth -

A spiced rum is a rum aged with spices such as cinnamon and allspice. Most major rum brands, such as Captain Morgan and Bacardi, have a spiced rum as part of their line of rums. I also love a local craft rum here in Massachusetts called Twenty Boat Spiced Rum, which is made with cardamom, vanilla bean, anise and rose hip by South Hollow Spirits in Truro, Massachusetts.

I have plain rum. What spices could I add to get the effect?

Hi Joan -

Spiced rum has quite a laundry list of spices - vanilla, cinnamon, clove, ginger, allspice, cloves, nutmeg - so I think it would be a bit challenging to replicate and I wouldn't know what to recommend in terms of quantities of each. I would probably pick your favorites from the list and add a little bit of two or three. Keep in mind that allspice, cloves, and nutmeg are all very potent spices. I wouldn't add much more than 1/8 teaspoon of any of those. A pinch may even be enough. Good luck!
