This rich, frittata-like omelet is delicious hot, but we also liked it at room temperature. The radish-cucumber pickle provides a bright contrast, as well as a pleasing crunch. Serve with steamed jasmine rice.

Tip

Don't use a conventional skillet. A nonstick coating is key, allowing the omelet to easily slide out of the pan. Also, make sure the skillet, including its handle, is oven-safe, as the omelet finishes cooking in the oven at 400°F.

It’s delicious with a caveat
We loved it. Very tasty but unusual flavors. If you like Asian food with fish sauce or anchovies then you will enjoy it.

Soy-ginger pork with eggs, if that sounds good then you'll like this.
I suggest ditching the jasmine rice, it doesn't really interact with anything since there's no sauce but highly recommend the pickled radish/cuke topping for fresh crunch and acidity!
