This recipe balances the sweet, nutty flavor of cauliflower roasted on a searing-hot baking sheet with the tanginess of whole-grain and Dijon mustards spiked with honey and lemon.

Delicious flavor counterpoints
I’ve made this recipe twice and enjoyed it so much more the second time when I didn’t have quite enough stone ground mustard as the recipe required. We really enjoyed the honey and lemon contrast to the mustards while the cauliflower itself didn’t feel overwhelmed. I also found that it cooked fine at 450 in a little less than 20 min (my smaller oven has an upper limit - so odd).

Subtle taste + air fryer
Loved the touch of dill on it. Honey and mustard make a great combination. Made it on the Air Fryer at 400F for 30 minutes.

I'm not sure where the honey or brown sugar fits in and doesn't give an amount.

How much honey? There is no quantity listed.

Lynn C.

Hi Barbara and Heather -

The honey is just to give the dressing a little sweetness. A drizzle of honey or a pinch or two of brown sugar should be all you need. Taste and season to your liking. Good luck!

This is a great recipe especially for those who don't really like cauliflower. I use 1-2 tsp of honey. This is the only time I use foil when I roast veggies, the mustard is a challenge to get off the sheet pan
