Broccoli, like most cruciferous vegetables, is especially delicious when deeply charred, which develops nutty, bittersweet flavors while crisping the florets. Our method of choice is a preheated baking sheet in an intensely hot oven, as more broccoli can be cooked this way than in a skillet on the stovetop. Charred broccoli is great on its own—maybe with some freshly squeezed lemon for brightness—but tossing with a few high-impact ingredients immediately after coming out of the oven takes the flavors to another level (see the recipes below).

Tip

Don’t forget to set a rimmed baking sheet on the oven rack placed in the lowest position when you turn on the oven. Make sure the baking sheet is heavyweight so it doesn’t warp and can withstand a 500°F oven.

    pounds broccoli, florets cut into 2-inch pieces, stems peeled and sliced about ¼ inch thick

    tablespoons grapeseed or other neutral oil

I could eat this every night!
Best way to cook broccoli and you can season it so many different ways. I recently used TJ's Green Goddess seasoning blend and it was delicious.

Charred broccoli
The broccoli was nice and crispy. This will be my go to recipe for broccoli. 🥦 nice and simple.
