Gobi Manchurian is a popular Indo-Chinese dish in which cauliflower (“gobi”), is battered and fried, then tossed in a tangy, salty-sweet “Manchurian” sauce. Though delicious, typical gobi Manchurian can be heavy, goopy and often overseasoned. To lighten things up, in this version, we ditch the deep-fryer and instead oven-roast cauliflower that’s coated with seasoned cornstarch and oil. The results are crisp, beautifully coated florets without greasiness or the hassle and guilt that comes with battering and deep-frying. After cooking, the cauliflower is tossed in a sauce of ketchup, soy and vinegar. We also use a good dose of scallions, chilies and ginger to keep the flavors fresh and bright.

Tip

Don’t be shy about rubbing the oil and cornstarch mixture into the cauliflower florets before roasting. This creates a coating that adheres to the cauliflower and helps deliver a crispy, craggy exterior to which the sauce will cling.

As good as the restaurant
These were so crispy, so much flavor. The sauce is pretty good too. I can see doing like another reviewer said and putting it on rice for a meal.

Addicting!
My oven is not heating reliably so I did the florets in the air fryer. So delicious! I actually had more sauce then was needed so I used it on the steak I had.

Outstanding flavor and crispy but needs more sauce
The Garam Masala, of course, as the spice base, makes all the difference. I used a Patak’s paste and the covering of the cauliflower was thick and when cooked was crispy and very spicy; just what I like. However, while the sauce was also great I wished there were more sauce to soak into the rice I served it with. I’ll work on that without changing the basics of the recipe, which is a clear success.

Good
I made this pretty much as the recipe stated. It was nice for a change but definitely not a healthy alternative. Sauce was good but heavy. It would be better served over rice or quinoa. I'll make it again sometime.

Better than the restaurants
I’m not joking about that, the Gobi marsala that I usually get in several different restaurants is greasy at times, and Hass to be eaten immediately for it to taste good. I love the air frying of the cauliflower in this recipe. Great job.
