Traditional eton mess is like a simplified trifle—strawberries, cream and meringue cookies, folded together in a large bowl. For our version, we used raspberries and spiked the whipped cream with sour cream to lend a subtle tang. Store-bought meringue cookies made this recipe a breeze to assemble; Trader Joe’s carries a good version. Layering the berries and cream gave us a more attractive final dish.

Don’t walk away from the oven while the meringues are under the broiler, as they can go from nicely toasted to scorched in a matter of seconds.

Better than what I was served in Dublin!
This recipe is heavenly. The mouthfeel is light and toothsome and oh so satisfying. The taste is perfect with the sour cream lending a tang and complexity to the whipped cream and the cardamom giving it a warm almost sensuous finish. Yes, I love this dessert! And the Trader Joe’s meringues work beautifully.

Cardamom and lemon add delightful complexity.
I was skeptical about the berry infusion, lemon zest and sugar just cancel each other out right? Wrong. The result is a big step up from my usual habit of just tipping the raspberries ( or strawberries) on top of the meringue. I made my own 9” meringue, with addition of good quality vanilla. Apart from that, I followed the recipe precisely and I am glad I did. I used the recipe to make a raspberry-pistachio pavlova, a perfect light “postre” for the family following a summer, grilled meat heavy, BBQ based Sunday lunch . No going back to old fashioned pavlova now.

I love this recipe! Flavor combo is superb; I love the update from old-fashioned Eaton Mess. Easy and beautiful presentation in a clear glass martini glass or bowl.
