Some Common Sense Adjustments Make This A Winner
Okay, true confessions: I couldn't make this as written because I had no broccoli, only a very nice head of organic cauliflower, its cruciferous cousin, and lots of lovely spinach and chard from my garden for the greens. With those substitutions, it was very good. But I don't understand why a recipe would call for 2 T of lemon zest (requiring 2 expensive, organic lemon at minimum) and no use for the juice. I zested one lemon, then added the juice to the sauce. Also, the amount of cheese is skimpy. I supplemented the very expensive grated parm with some feta and upped the green quotient with some basil from the garden. Another quibble: why use 12 oz of pasta? It comes in 16 oz. With the price of quality food right now, Milk Street really needs to think things through and not set folks for waste or spoilage with random proportions that would never fly in the kitchens that inspire their recipes.
