Pork tenderloin and kimchi headline this stir-fry, but fresh shiitake mushrooms and a full bunch of scallions add to its umami-rich appeal. For a meatless alternative, substitute a 14-ounce container of extra-firm tofu, drained and cut in 1-inch cubes, for the pork.

Don’t finely chop the kimchi. Larger pieces better retain their texture and flavor.

Could you use dried shitakes for this if in a pinch for this kimchi flavor bomb?

I've tried both ways and both worked fine. I can get a 1 oz. package at a local grocery for $2.50. As good or better than the fresh.
Adding that I love this recipe.

Made it last night! Delicious. But extra shitakes.
But of course flavor will depend on the kimchi one buys. I bought a spicy one but it was disappointingly NOT spicy at all.

With modifications: Mirin: Sake with sugar, Cauliflower kimchi with radish kimchi and possibly that caused it to be barely palatable. I will put this dish in my do not make list.

We didn't like this either. I made it as written except with dry sherry instead of mirin. Was thinking maybe we just don't like kimchi.

So good! My husband and I devoured this. Comes together quickly and very satisfying. We used some sliced up pork chops that had probably been in the freezer too long. Impossible to tell they were a little old with all that kimchi! Yum!
