Spaghetti with Anchovies, Raisins and Cherry Tomatoes
This one-pot pasta dish features a Sicilian salty-sweet flavor profile, and it requires no knifework! Cherry and grape tomatoes tend to be sweet and of good quality year-round (more so than regular round tomatoes), so they’re almost always our first choice for sauces made with fresh tomatoes. To prevent the noodles from sticking together during cooking, be sure to give the pasta a good stir after adding it to the tomato mixture.

This was a great dish. The sauce has a wonderful mouthfeel from all of the starch released into the water. I encourage you to give this dish a try. I know...anchovies and raisins. It’s delicious.
