Steak with Smoky Tomato Butter, Shallots and Wilted Frisée

This easy but delicious steak dinner is an adaptation of a recipe in “Gjelina” by Travis Lett, and it gets an impressive meal on the table in well under an hour. Softened butter mixed with smoked paprika, garlic and minced sun-dried tomatoes melts onto simple pan-seared flat iron steaks as they rest. Meanwhile, we sauté shallots, deglaze the pan and quickly wilt in some frisée (or watercress). Warm crusty bread is all you need on the side.

Tip

Don’t shorten the resting time for the cooked steaks or they will release a lot of juice when sliced. About 10 minutes is best, so wait for about 5 minutes before starting the shallots. Don’t overheat the greens. Be sure the skillet is off heat when they go in, quickly turn them to coat and immediately transfer to a platter. They should still be perky, not fully wilted.

Easy on the eyes
Am not a huge beef fan, but this was well seasoned and looked good, better than the milk street photo! I served it with dirty farro and it was delicious.

How much is 3 sun-dried tomatoes? I could only find julienned so I need an approx measure

Hi Casey -

We wouldn't stress too much about a specific measure meant here - you can probably eyeball it and it will be fine. Add some sundried tomatoes (we'd add less than what you think you need) to the butter and spices and taste. If you feel like it needs more tomatoes, add a bit more.

This is an under appreciated recipe on this site. Nothing needs to be exact. Don’t have frisée? Use arugula or red lettuce. Can’t find flat iron steak? Flank steak definitely gets to the same place.
This is a great, easy, summer steak recipe that basically uses normal pantry ingredients.

Two best recipes I’ve found on this website- the thick strip steaks with nutmeg +/- red chimichurri, and this… are the very easiest. I think there’s a lesson there!
