Steel-Cut Oats with Cardamom, Apricot and Pistachio (Durotherm)
Steel-cut oats capitalize on the Durotherm's off-heat cooking ability. Since the pot holds heat exceptionally well, the oats will stay hot for up to 2 hours after they finish cooking, meaning you could make these well ahead of guests arriving. In this recipe, cardamom, apricots and pistachio add spice, tartness and texture to the creamy oats.

If using a gas stove, don't allow the flames to reach the sides of the Durotherm pot.

teaspoon ground cardamom

01In a Durotherm over medium, melt the butter. Add the cardamom and cook until fragrant, about 30 seconds. Stir in the oats and cook for 5 minutes, stirring often. Stir in the water, apricots and salt. Cover, bring to a simmer over medium, then cook for 20 minutes, adjusting the heat to maintain a gentle simmer.
I just joined Milk Street, one disappointment is that so few recipes I have looked at had no comments. Now I see that someone posted a comment in 2020 and it never appeared. Why?

Each comment that is posted to our system needs to be reviewed by a real human and then gets approved and, if necessary, answered by a real human. We do our best to answer them in a timely fashion but, in some cases, we may miss one. In other cases, we get two comments that are the same so we only answer one. In this particular case, this comment never appeared in our approval system to be approved, which was a glitch in the system. Our web team is always working to improve the customer experience and is updating and evaluating our software on a regular basis.
