I made this for dinner tonight and served it over the rice noodles. It was pretty good. Its easy to make. I chopped everything before starting to cook and also prep the sauce. I have added carrots and bok choy as well. For some reason, my sauce was not thickening or "leaving a trail" but it still turned out good. Maybe adding additional veggies made the sauce have additional water so it did not caramelized. I have added 2 tablespoons packed brown sugar.
