This simple garlicky, tangy, spicy-sweet dipping sauce is known as nam jim kai. It’s the condiment of choice for fried foods, as well as for grilled chicken. You can purchase the sauce in bottles at the grocery store, but homemade tastes much fresher and more balanced. It will keep in an airtight container in the refrigerator for a week; bring it to room temperature before serving.

medium garlic cloves, finely grated
red Thai chilies, stemmed and thinly sliced, or 1 to 2 teaspoons red pepper flakes
