This wholesome but hearty dish was inspired by a recipe in “Mediterranean Cooking” by Paula Wolfert, an expert on North African and Mediterranean cuisines. We don't soak the dried chickpeas for this recipe; they take a little longer to cook than if they had been soaked, but their texture remains slightly firmer and offers a more appealing textural contrast to the tender Swiss chard. Use rainbow chard if you can find it—the vibrant stems add color to the dish. This is an excellent a side to roasted or grilled chicken or lamb, or serve it as a main along with warmed flatbread and couscous or rice.

Tip

Don't leave lots of water clinging to the chard after washing the leaves. Drain well so there won't be excess moisture to dilute the flavor and consistency of the stew.

Good but...
Usually a lot of Milk Street recipes are almost over the top with flavor and this one was good, but I was somewhat underwhelmed. I used CSA Chard and some nice quality dried chickpeas. The flavors are good but somewhat mild. Personally I'd probably concentrate the flavors a little more and embolden the spices. I served with cous cous which also kind of diluted the flavors. Next time I eat this, I'll probably drizzle on some olive oil and add some preserved lemon and also some hot sauce of some sort.

Don't suppose you have a version for those of us without and Instapot? Chickpeas and swiss chars are too of my favorite ingredients. I cook garbanzo beans on the stove. Soaked for 24 hours first of course. Do unsoaked chickpeas only work for Instapot cooking? Thanks

We’re so glad you're exploring our recipes. When we developed the recipes for our Instant Pot book, Fast and Slow, we offered pressure cooker and slow cooker instructions for every recipe that worked well cooked either way. Recipes that have only one set of instructions did not produce good results when prepared with the alternative method. And unfortunately, it’s not possible for us to reverse engineer Instant Pot recipes for stovetop cooking. But the good news is that many of them were inspired by recipes we’d already prepared for conventional cooking methods. If you check our website, you might find what you are looking for.

Made this dish last night. I loved the spicy flavor and the texture of the chickpeas were PERFECT. I doubled the Swiss chard bc I happen to have two bunches in the house. What a great healthy vegan meal!
