Blender Guacamole (Guacamole Taquero)
- MakesMakes about 3 cups
- Cook Time15 minutes
In her home kitchen in Oaxaca, chef Andrea Ramírez whipped up a smooth, salsa-like guacamole for us in a blender. No need for a molcajete (a mortar and pestle made of stone traditionally used to make guacamole), and barely any knife work required. Tomatillos and cilantro add bright flavor and also help keep the color fresh. Thick but spoonable, this guacamole can be used as a dip for tortilla chips but it’s also excellent as a condiment for tacos—the reason it’s commonly referred to as “guacamole taquero.”
Don’t use avocados that are anything less than ripe. They should yield to gentle pressure, offering only the slightest bit of resistance. Underripe avocados require more water for thinning, so the guacamole won’t be as creamy and flavorful. They also taste “green” and vegetal instead of sweet and rich.
