Cuban mojo inspired these tangy-sweet chicken skewers that are cooked under the broiler. A mixture of citrus zest and juice, cilantro, vinegar and garlic doubles as quick marinade and sauce for serving on the side. Grapefruit or oranges work equally well here; when zesting the fruit make sure to remove only the colored peel, not the bitter pith underneath. For easiest clean up, line the baking sheet with foil before placing the skewers on top.

Even my picky kids will eat these!!
Made as directed with grapefruit. The kids loved them and the sauce was great over brown rice

Cooked these over the grill today and they were really good! The grapefruit/cilantro mix was delicious without being overpowering. I did marinate the chicken in the mix for an hour first and used unseasoned rice vinegar as I had no white wine vinegar. Another keeper from Julia and the Milk Street team. Thanks, folks!
