Fennel-Smothered Pork Chops
- Makes4 servings
- Cook Time35 minutes
Sweet, licorice-like fennel has an affinity for meaty, mild pork. In this sauce, dry vermouth brings herbal complexity without the sting of acidity; however, if you have white wine on hand, it too works perfectly well. Try to select chops that are similar in size so they cook at the same rate. If the fennel bulbs you purchase do not have fronds attached, substitute finely chopped flat-leaf parsley for some fresh notes and bright color.
