Ginger-Scallion Skillet Shrimp with Napa Cabbage
This light, flavor-packed dish is wondrously simple to prepare. In less than 15 minutes, large briny-sweet shrimp—coated in bold seasonings including ginger, soy, mirin, sesame oil and lime—are steamed to perfection. Fragrant scallion greens and tender napa cabbage leaves layered over the shrimp add vibrant pops of color as well as supple crunch. During cooking, the combined moisture of the shrimp, marinade and vegetables creates a zingy, savory-sweet sauce that’s especially delicious spooned over rice.

Don’t start the shrimp in a hot pan; beginning with a cold pan ensures they cook evenly and gently so their finished texture is tender and plump.

scallions, white parts minced, green parts cut into 2-inch pieces, reserved separately

bunch cilantro, stems minced, leaves roughly chopped, reserved separately
Directions

01In a 12-inch skillet off heat, stir together the scallion whites, cilantro stems, mirin, soy sauce, ginger, sesame oil, lime zest and ¼ teaspoon salt. Add the shrimp and toss to coat, then distribute in an even layer. Scatter the scallion greens and cabbage over the top.
