Miso-Glazed Broiled Salmon
Soy sauce, mirin, white miso and honey combine to create a sweet-savory balance in this super-simple recipe. Some of the glaze mixture is reserved for serving—drizzle it over the salmon itself or onto a side of sautéed greens or broccoli.

Don't use salmon fillets from the tail end of the fish, as they are thinner and will overcook under the broiler. Purchase center-cut fillets and try to get pieces of the same thickness so they cook at the same rate.

01In a small bowl, whisk together the miso, 4 teaspoons of honey, the soy sauce, mirin, sesame oil and cayenne. Measure out 2 tablespoons and brush onto the top and sides of the salmon fillets. Let stand at room temperature for 20 minutes.

A few modifications: I cooked it on the bbq (‘cause we are in Arizona and why would I put the oven on??!) as a result salmon had lots of the glaze when it was finished cooking so I did not add the extra glaze. (I froze the extra for another lucky piece of salmon.) I did not have mirin so I substituted rice vinegar. This recipe is a keeper -thanks Milk Street!
This salmon was absolutely delicious! Based on other comments, I used only a teaspoon of mirin and added a half teaspoon of rice vinegar to balance things out. It was perfect. I could only find thinner cuts so I pan-fried to avoid overcooking. Served with basmati rice and Milkstreet's 'cilantro, scallion and cucumber salad'.
Made this last night. Couldn't find Mirin, so I substituted with the same amount of Marsala wine. Worked well. I also used Everything but the Bagel in place of the sesame seeds and that was worked well too. This was a huge hit with my family. I'm not a big fan of salmon myself, but this made it great for me, ate every bite! I made this with Pearl Couscous "Risotto" and Sesame And Cumin Roasted Green Beans With Tahini Sauce both here on the Milk Street site. All three dishes are keepers for us.
This was really good! I think the crunch of the sesame seeds was an added bit I almost didn’t do...glad I did. I thought there wasn’t enough miso, so I added a little more. Mistake. It would have been great just the way it was written. Will be making this again. It was easy and fast. Perfect middle of the week meal for us.
