Nihari is a richly spiced South Asian stew, often made with a special spice blend called nihari masala, and with genrous amounts of browned onions and fresh ginger. Our much-simplified version depends on readily available garam masala (an Indian spice blend) for warmth and complexity, supplemented by the earthy, fruity notes of sweet paprika. We add grated fresh ginger and lemon juice at the very end to sharpen the all the flavors. Serve with basmati rice or warmed flatbread.

Weekday winter warmer.
The simplicity of the recipe was what keeps this a weekday favorite. Served with roti.

Way, way too salty - we threw out the leftovers. I'm finding this to be a common problem with Milk Street recipes.

I'm surprised. One tablespoon of salt to 4-5lbs of meat seems like a reasonable ratio.
