Passata Pizza Sauce
- MakesMakes about 3 cups
- Cook Time5 minutes
Tomato passata—often referred simply as “passata”—is a seedless, skinless tomato purée made by lightly cooking tomatoes, then blending and straining them. Typically sold in glass bottles, it tastes fresher than canned crushed tomatoes and tomato puree, and its consistency is lighter. We use it for a no-cook, barely-a-recipe sauce for homemade pizza. The amount is easily halved if you need only a little sauce, or refrigerate leftovers for up to five days or freeze for two months.
