Salmoriglio is a Southern Italian condiment combining olive oil, garlic, lemon and herbs. It’s the perfect finishing touch and flavor brightener for skillet-simmered white beans, tomatoes and kale. We include a couple anchovy fillets for savoriness. Anchovy skeptics will never know they’re in there; on the other hand, anchovy fans might want to double the amount. Note that the liquid from one can of beans is drained off and the liquid from the other can goes into the mix, supplemented by a little water so the finished dish doesn’t wind up stodgy. Offer warm, crusty bread alongside.

Tip

Don’t add the lemon juice to the salmoriglio until you’re ready to serve. If the juice is added early on, the acidity will cause the herbs to turn drab in color.
