Smoked Paprika Spice Paste with Cumin and Oregano
A combination of rich, woodsy smoked paprika, earthy cumin and herbal fresh oregano (dried oregano works well, too), this richly hued spice rub is Spanish in its inspiration. To keep the flavor profile from feeling heavy, we also include ground coriander and grated lemon zest—both add light, citrusy notes. We use cumin seeds and pulse them only a few times in a spice grinder, leaving some not fully ground so they add texture as much as flavor. This mix is ideal for mild, lean meats such as chicken or pork. It’s also great tossed with cauliflower before roasting.
