Sichuan peanuts, aka mala peanuts, are seasoned with salt, chilies and tongue-tingling Sichuan peppercorns. They typically are made by deep-frying raw nuts, but our simplified version starts with roasted peanuts and toasts them in the oven until bronzed and crunchy. We also add a little sweetness to balance the salt and spice. Be sure to use refined oil (peanut or coconut are best), as it has a higher smoke point that unrefined oils. The peanuts are an addictive snack, but also are an excellent garnish on noodle or rice stir-fries. Or try them chopped and sprinkled on ice cream.
