In this recipe, earthy mushrooms create an elegant, flavor-filled vegetarian ragù with an amazingly rich, concentrated taste and texture. Fresh mushrooms provide the bulk; we like a mix of cremini, oyster and shiitake, but feel free to use your favorites. And to boost the umami factor, we include dried porcini mushrooms along with their soaking liquid, then store-bought mushroom broth (or vegetable broth) and a dash of soy sauce enhance the savoriness even more. (The soy sauce might seem out of place here, but it disappears into the ragù.) A food processor makes quick work of chopping the fresh mushrooms, but if you wish to hone your knife skills, you can prep them by hand. Long noodles such as tagliatelle or fettuccine are a great choice for this dish as the bits of mushrooms will cling to the surface of the noodles. Use fresh pasta if you like; to make your own, try our recipe for homemade egg pasta.

Hearty pasta
Wonderful Pasta for those meatless days, so rich in flavor easy to make and very satisfying. I will make this pasta many times more. I ended up using cremini and portabello mushrooms and mixed dry mushrooms, that I had in my pantry and still had a wonderful flavor.

substitution for wine for Louise A
I have not made this yet, but plan to tonight. I am sure you could use White Vermouth for the white wine, you can buy it in half bottles and will keep for a few months

Heavenly every time!
I've made this 3 times thus far... and it hasn't disappointed yet. A perfect dish for a cold winter night, alone as a main course or as a side to roasted bone in garlic thyme chicken breasts. The last time I added a scant amount of heavy cream for a slightly richer taste. It's savory, unctuous & the soy is the surprising ingredient that ensures umami is delivered. Yummilicious!

Substitution for wine?
Any suggestions for a substitution for the wine? We drink liquor but not really wine so the rest of the bottle would go to waste. Stock? A different liquor? Thanks
