Instant Pot Recipe Substitutions

Are there non-Instant Pot versions of the recipes for (i) Cannellini Beans with Tomatoes, Basil and Parmesan or (ii) Simple White Beans with Sage?

    We don't have an exact replica, but I would recommend this recipe for the Cannellini Beans with Tomatoes, Basil and Parmesan. You can either soak and pre-cook dried Cannellini beans (instructions are in the introductory note of the recipe) or use canned Cannellini beans. In Step 1, substitute fennel seeds for the fresh fennel and eliminate the sage. Then, if using, add the Parmesan rind when you add the tomatoes and cooked beans in Step 2. You can skip Step 3 (making the sage oil). Then stir in half of the basil and top with shaved Parmesan and the remaining basil. The Simple White Beans with Sage is based off this recipe. Follow the recipe substituting the thyme and rosemary for sage. Best, Lynn C.

  • Hi John - Again, no exact replica, but you could follow our Saffron Risotto recipe omitting the saffron (so no need to make the saffron broth) and sautéing the sausage before adding the broth. Follow the cooking instructions for the saffron risotto and add 1/2 cup plain broth where it says to add the saffron broth. Add the arugula before finishing with the vinegar. If you don't want to make the vegetable broth here you can use chicken broth. Since there's much more flavor in this version thanks to the sausage and arugula, the homemade vegetable broth isn't as critical. Good luck! Best, Lynn C.
