A good recipe isn’t enough to bake flawless pies. You also need a well-crafted pan, which determines not only how it bakes, but also how it slices. But choosing the right pie pan can be surprisingly difficult. Decorative pans may look nice on the table, but they usually underperform in the oven. Meanwhile, steel pans often are flimsy, and glass pans are relatively poor conductors of heat, often yielding soggy-bottomed pies (they even can explode in the oven due to thermal shock).
