Pickled Carrots and Daikon
These quick pickles, called đồ chua, probably are best known as a component in bánh mì, or Vietnamese sandwiches. They add bright color and flavor as well as crunch.

Next time I would just stick the daikon & carrots and shred in a food processor For it to marinate super quick. The larger sticks were a tad pungent. We only had seasoned rice vinegar on hand so we added a little of sugar & salt until we liked the taste.
