Pan-Seared Steak with Zhoug
Zhoug is a Middle Eastern condiment made with herbs, fresh green chilies, lemon and spices. Its spiciness and bright, fresh, grassy flavors perfectly counter the richness of steak. We use a food processor to minimize the knifework for making zhoug, but if you prefer you can mince the herbs, garlic and chili by hand. If using flank or skirt steak, cut the meat into two or three pieces that fit comfortably in the skillet.
