Banana Frita, a traditional Garifuna dessert, is made by mashing ripe bananas and mixing them with cinnamon, nutmeg, salt, coconut milk, a little sugar and pinch of salt. Then you add flour and fry up the mixture in coconut oil. Watch as Isha Sumner walks Christopher Kimball through the classic dessert and then try the recipe below. Serve with ice cream!

Bananas fritas / Frita tau Bimina (Garifuna Dessert)

Serves 4-8 people

6 ripe bananas
1½ cups of flour
¼ teaspoon of salt
½ teaspoon powder cinnamon
1 tablespoon of vanilla extract
1 pinch of powder nutmeg
½ cup of coconut milk
1 tablespoon of sugar
½ cup of coconut oil

Place the bananas in a medium size bowl, mash them until soft.

Mix in all the ingredients—salt, cinnamon, vanilla, sugar—to the banana paste. Gradually add the flour, then the coconut milk as you mix the banana paste for a thicker than pancake texture.

On a stove, place a large frying skillet at medium low heat and pour ½ cup of coconut oil into the skillet and let it heat up.

With a cooking spoon, add 1 spoon full of banana paste to the frying pan. Let it fry for about 45 seconds on one side or until brown. Turn it over to the other side and cook until brown.

Serve hot with syrup or with some vanilla ice cream.
