Stir-Fried Udon with Bacon and Cabbage
Thick, chewy Japanese udon noodles are great stir-fried. In this recipe, we combine them with smoky bacon and crisp-tender green cabbage. Use low-sodium soy sauce, as regular soy sauce may result in an overseasoned dish. Sliced scallions, though an optional garnish, bring fresh color and flavor, so sprinkle some on if you have a few in your refrigerator.

Very good. I used the low sodium soy, but also replaced half of it with dry sherry to further reduce the sodium. Also used less bacon as I was using a highly flavorful maple bacon from the farmers market and I didn’t want to much sweet from the maple.
