Broccolini with Miso Caesar Dressing
This spin on Caesar dressing uses mayonnaise as a base. It’s rich in umami because of the Parmesan (or anchovies), and a couple tablespoons of white miso adds incredible depth of flavor, loads of complexity and a subtle sweetness. A splash of olive oil and garlic, its bite tempered by a quick steep in tangy lemon juice, complete the dressing. We use this on blanched Broccolini, but you could substitute 1 large head romaine lettuce, torn into bite-size pieces, then finish the salad with crunchy croutons.

01In a small bowl, stir together the lemon juice and garlic. Let stand for 10 minutes. Add the mayonnaise, Parmesan, miso and oil; whisk until well combined. Taste and season with salt and pepper.
